Pahadi Ghughuti Recipes: Makar Sankarati sagyan of Kumao Uttrakhand | Pahadi Sweet Dishes
Makar Sankranti or Ghughuti festival named after the bird cuckoo is celebrated with great gusto in the entire Kumaon region of Uttarakhand.
This joyful festival falls on January 15 of each year. Though Makar Sankranti is observed by flying kites, taking a holy dip and donating and eating khichdi (a mixture of rice and lentils cooked together) but Uttarakhand has its unique way of celebrating the fest. This auspicious festival celebrates the welcoming of birds from winter migration. Uttarayani, which marks the beginning of the northward journey of the sun is noted as the returning period of the migratory birds to the distant hills of Uttarakhand. - 1 kg wheat Floor
- ½ kg Gud/ Jaggery
- 4 tsp roast Souff/Fennel Seeds
- 3 tsp roast Til/sesame
- Oil/Ghee to fry
Method to make sweet Ghughuti
- Firstly crushed Jaggery in 500 ml hot water
- Now add roast fennel and sesame seed into wheat floor add 250 ml oil or Ghee (make crispy & soft) and mix all.
- Now add Jaggery water in the wheat flour and make a dough with soft like parathas dough.
- Now dough of Ghughti ready, take a little amount of dough in your hands & roll like a thick string out of it and twist and crossed like 8 number.
- You can make any shape as per kids and your choice.
- After make all put all ghughute in the sunlight for a while (1 hr).
- Now deep fry into the Pan till it turns brown.
- Ready to Serve.
